Garlic Sautéd Broccoli Rabe

Similar to garlic green beans, this side dish adds a garlicy pop to any meal!

TIME: 5 minutes prep, 15 minutes total YIELD: 4 servings RECOMMENDED VARIETY: Armenian
INGREDIENTS
1 bunch broccoli rabe
3 tablespoons extra-virgin olive oil
4 cloves garlic, sliced
juice of 1 fresh lemon
½ teaspoon sea salt
½ teaspoon ground black pepper
1 teaspoon hot chili flakes to taste
INSTRUCTIONS
Wash broccoli rabe and pat dry. Then trim the bottom ½ inch off the stalks and cut into 1½ -inch pieces.
Heat olive oil and garlic on medium heat in a frying pan.
Toss broccoli rabe into the pan along with salt, pepper and chili flakes, then cover to wilt.
Cook for another 4–5 minutes, stirring every few minutes.
Add lemon juice just before removing from heat.
Serve hot!
NOTES
The longer you cook broccoli rabe, the less bitter and softer it will become.
