Garlic Scape Dressing
A deliciously tangy dressing that tastes great on almost anything!

TIME: 10 minutes YIELD: 8 servings RECOMMENDED VARIETY: Fresh or Frozen Garlic Scapes
INGREDIENTS
4–6 whole garlic scapes, coarsely chopped
2 green onions/scallions, coarsely chopped
1 teaspoon honey
2 teaspoons Dijon mustard
¼ cup red wine vinegar
1 tablespoon lemon juice
dash of sea salt (more to taste if desired)
¼ teaspoon ground black pepper
½ cup extra virgin olive oil
INSTRUCTIONS
Place all ingredients except the olive oil in a food processor or blender.
Process/blend on medium-high until smooth.
Change speed to low and slowly add the olive oil until well combined and frothy.
Store in an air-tight glass container or jar and refrigerate. Keeps for up to 1 week. Shake well before serving.
VARIATIONS
Make it creamy: Add plain yogurt, plain plant-based yogurt, buttermilk or sour cream.
Make it silky: Add 1 ripe avocado or ¾ cup silken tofu. (This is our favorite variation as pictured above!)
Make it Green Goddessy: Add ¾ cup plain Greek yogurt or sour cream, 1½ teaspoons anchovy paste, and either 1 cup mayonnaise or a ripe avocado.
Make it fresh and herby: Add a handful of fresh basil, tarragon, savory or parsley.
This versatile recipe is also great on roasted potatoes or vegetables, as a fresh veggie dip, when used to flavor a cold pasta salad, as a sandwich spread, or as a light and bright sauce for steak, grilled chicken, or fish.
