Mushroom & Garlic Sauté

In this dish, mushrooms soak up all the great garlic flavor beautifully to compliment any main dish.
TIME: 5 minutes prep, 12 minutes total YIELD: 4 servings RECOMMENDED VARIETY: German Hardy
2 tablespoons olive oil
12 ounces button mushrooms, thinly sliced
3–4 cloves garlic, finely chopped
salt and ground black pepper
4 green onions, finely chopped
In a large skillet, heat olive oil on medium heat until hot but not smoking.
Add sliced mushrooms and garlic, and sauté for about 3 minutes, stirring regularly.
Add salt, cover with the lid and continue cooking the for another 2 minutes, occasionally stirring. (Having the lid on will allow mushrooms to generate some moisture and not get burned.)
Remove the lid and sauté for another 5 or so minutes on medium-high heat, stirring frequently.
