White Bean Scape Hummus

Delicious, light, garlicky -- what more do you want from hummus?!

TIME: 5 minutes prep, 10 minutes total YIELD: 2 cups, 4–6 servings RECOMMENDED VARIETY: Fresh or frozen garlic scapes
INGREDIENTS
10–12 fresh or frozen garlic scapes with bulb ends removed, cut into 2” pieces
juice of one lemon
½ teaspoon sea salt
ground pepper
1 can (15 oz.) cannellini beans, rinsed and drained
¼ cup extra virgin olive oil
INSTRUCTIONS
Place garlic scapes, lemon juice, and salt into food processor, pulse until finely chopped, scraping the sides of the food processor bowl as needed.
Add beans and process to a rough puree (beans will be almost completely mashed).
While the food processor is running, slowly add olive oil and process until smooth. If the hummus is too thick or paste-like, add 2–3 tablespoons of water to thin to desired consistency.
Add more salt and pepper to taste, and serve with your favorite veggies, pita chips or corn chips.
