Belarus is a Glazed Purple Stripe garlic with a rich, sweet, garlicky flavor that is delightfully mellow even when raw. Higher sugars make this a good variety for roasting, baking, pickling and fermenting in honey. The roasted flavor is even more mellow and sweet than when raw, which makes this a good variety to pair with delicate dishes and fish. Belarus bulbs might not get as large as some other varieties, but they really are our favorite for roasting!

The bulb wrappers are thick and are such a beautiful, shimmery and iridescent white that we've nicknamed this variety "Unicorn Garlic!" The inner wrappers are vertically striped with increasingly more purple stripes the closer to the cloves one gets, and each bulb contains 6–8 medium-sized cloves. The thick, brownish-purple clove skins are easy to peel, and the medium-sized, light yellow cloves are not too sticky. Belarus garlic can keep for 5–6 months when stored at room temperature in a dry, dark place that has plenty of air circulation.

The Quantity Guidelines listed above are ESTIMATES to help you decide how much of this garlic variety to order by weight so you can plan for your cooking needs.

Note: Garlic is an agricultural crop that is subject to loss due to conditions beyond our control. This can even occur in the curing stage. We check each bulb before shipping them to you, and if there are any quality issues with our stock, we may need to substitute the variety you want with another, similar variety. We rarely need to do this, but if it does become necessary, we will contact you prior to shipping to discuss your options.
