Chrysalis garlic has a bright, green or scapey garlic flavor with a mild heat that intensifies with cooking. When raw, the woodsy, fresh flavor pairs very well with citrus-flavored dressings or vegetable dishes. When cooked, the mild heat compliments smoky dishes extremely well.
Chrysalis Purple bulbs tend to be medium-small to medium in size, but the unique, woodsy flavor means a little can go far. This variety has a thick, white and purple bulb wrapper, and each bulb typically has 8–10 medium-sized cloves. The thick, tan and burgundy clove skins are easy to peel, and the cloves are very easy to mince. Chrysalis garlic keeps for 2–3 months when stored at room temperature in a dry, dark place that has plenty of air circulation, but it is best when eaten in August through October.

The Quantity Guidelines listed above are ESTIMATES to help you decide how much of this garlic variety to order by weight so you can plan for your cooking needs.
Note: Garlic is an agricultural crop that is subject to loss due to conditions beyond our control. This can even occur in the curing stage. We check each bulb before shipping them to you, and if there are any quality issues with our stock, we may need to substitute the variety you want with another, similar variety. We rarely need to do this, but if it does become necessary, we will contact you prior to shipping to discuss your options.
